Known for his meticulous attention to detail—from cocktail craft and room flow to air quality and ritual—he has successfully scaled the brand nationally while preserving its authenticity, standards, and sense of soul.

Known for his systems-driven approach and calm, hands-on leadership style, Nicholas brings clarity and structure to complex operations—ensuring teams are supported, standards are consistently executed, and every location delivers a seamless guest experience. His focus on process, accountability, and real-time coaching helps drive operational excellence across every touchpoint, from back-of-house systems to front-of-house hospitality.

Greg Grant serves as President of Red Phone Booth Hospitality Group and Co-Founder of Amalfi Cucina + Mercato. With a hospitality career spanning more than four decades, Greg focuses on brand development, guest loyalty, executive leadership development, and culinary growth. His global perspective—shaped in part by living and training along the Amalfi Coast with the AVPN—anchors the authenticity, warmth, and human connection that define the company's hospitality philosophy.
